Carciofi or Artichokes are everywhere at the moment and there are so many ways to enjoy them. Artichokes are high in antioxidants, low in calories, low fat and high in fibre – a true superfood! When artichokes are at their best, they are so tender, you can just eat them raw. You can also boil them, stir-fry them with garlic, oil and chilli or use them in soups.

HOW TO SELECT

When buying artichokes, make sure that they are firm and without any bruises. Choose bulbs that have the points of the ‘petals’ closed well. The stem should be firm without any damaged edges. If there are still leaves attached, make sure they are fresh.

 

HOW TO PREPARE

Cleaning the artichoke is quite easy but it does require a bit of patience and good preparation. When the cut edge of an artichoke makes contact with the air, it oxidises very quickly. To avoid this and keep the beautiful colour intact, prepare a bowl of water with lemon – both the juice and wedges, to immerse the artichoke pieces as soon as they have been cut.

 

HOW TO STORE

If your artichokes are very fresh, then you can put them in a vase of water like a bunch of flowers. Otherwise you can keep them in the fridge. Artichokes can also be frozen after being cleaned and boiled briefly in lemon and water. Leave them to cool and place in an air-tight container.

Artichokes
Lemon Juice Parmesan Walnuts (optional)

METHOD

Clean artichokes and slice to your liking. Toss immediately in lemon juice.
Add shaved parmesan & chopped walnuts Dress with Olive Oil, salt & pepper.
